The purpose of today's visit was to conduct a routine assessment.
1. Please replace acoustic ceiling tile in kitchen prep area with smooth and easily cleanable tile within 90 days.
Please continue the following practices as a means to incorporate Active Managerial Control:
1. Creating and monitoring sanitizing Standard Operating Procedures (SOPs)
2. Training employees on proper handwashing techniques
3. Monitoring cold holding and hot holding temperature using food temperature logs.
  • Critical: Eating, Drinking, or Tobacco Use / Proper Food Employee Drinking Containers (corrected on site)
    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. OBSERVED 3 DISPOSABLE COFFEE CUPS BEING STORED ON PREP TABLE WITHOUT LIDS AND STRAWS.
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items. LIDS AND STRAWS PROVIDED BY PERSON IN CHARGE. CUPS MOVED TO OFFICE AREA.
  • Floor , Wall & Ceiling / Design
    Observation: The ceiling tile located in KITCHEN PREP AREA is absorbent and not easily cleaned.
    Correction: PLEASE REPLACE ACOUSTIC CEILING TILE IN KITCHEN PREP AREA WITH CEILING TILE THAT IS SMOOTH AND EASILY CLEANABLE WITHIN 90 DAYS. Wall, floor, and ceiling surfaces shall be smooth, durable, easily cleanable, and non-absorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, and toilet rooms.

1. Daily checklist for cleaning, properly thawing food, and monitoring food temperatures for each employee
2. Training employees monthly on Employee Health Policy
  • Floor / Wall / Ceiling / Cleanability
    Observation: Observed that the CEILING TILE IN PREP AREA is not smooth and easily cleanable.
    Correction: PLEASE REPAIR/REPLACE ACOUSTIC CEILING TILE SO THAT CEILING IS SMOOTH AND EASILY CLEANABLE WITHIN 30 DAYS. Floors, floor coverings, walls, walls coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
  • Physical Facilities Good Repair
    Observation: Observed that the CEILING TILE ABOVE PREP AREA IS MISSING AND is not maintained in good repair.
    Correction: PLEASE REPAIR/REPLACE CEILING TILE WITHIN 30 DAYS. Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.
