    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

All PHF's in the display sandwich unit stored on ice, temperatures being monitored during a day and temperature log is available. New sandwich unit have been ordered and will be installed during next month, according to the owner.
Please use test kit to ensure proper sanitizing concentration, dispenser was clogged and sanitizer was not dispensed properly.

Hot air from bread oven effecting the temperature of the food in display unit. Suggested to keep containers with food covered while baking bread or keep all food in the walk-in cooler and take out after done baking.
Clean and organized facility.

    Observation: Sliced turkey, ham, tomatoes, salami and chicken strips cold holding at improper temperatures in the display unit.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.

    Observation: Pepperoni, sliced ham, sliced roast beef and sliced tomatoes cold holding at improper temperatures. Containers are overloaded and top layers found at higher temperature.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Do not overload containers.

Quaternary sanitizer in use in the 3-vat sink and wiping cloth container tested at 200 ppm.
Non-critical violation must be corrected within 30 days.
