  • Critical: Consumer Advisory, Disclosure Provided
    Observation: Observed cater menu providing reminder, however missing disclosure.
    Correction: EHS DISCUSSED WITH MANAGER. MANAGER IS IN THE PROCESS OF FIXING MENU. PLEASE FAX/EMAIL AN UPDATED MENU WITH DISCLOSURE AND REMINDER. The Consumer Advisory shall include a disclosure statement that includes a description of the animal-derived foods as raw/undercooked or identification of the animal-derived foods by asteriking (*) them to a footnote that states that the items are served raw or undercooked, or contain raw or undercooked ingredients.
  • Controlling Pests by Routine Inspection of Premises
    Observation: The premises is not being routinely inspected for the presence of insects, rodents and pests.
    Correction: MANAGER CONTACTED PEST CONTROL SERVICES, INVOICE WIL BE EMAILED/FAXED TO HEALTH DEPARTMENT. Insects, rodents and pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. Routinely inspect the premises to control the presence of insects, and pests on the premises.

  • Duties / Monitor Sanitizing Practices and Procedures (corrected on site)
    Observation: Observed employees are not properly sanitizing surfaces, observed 0 parts per million available in chlorine buckets.
    Correction: The Person in Charge or certified food manager shall train his/her employees to properly sanitize all equipment, utensils, and surfaces after being cleaned using either an approved sanitizer at the adequate concentration to destroy pathogenic bacteria. DISCUSSED WITH MANAGER TO TRAIN EMPLOYEES PROPERLY TO ENSURE APPROPRIATE STRENGTH OF SANITIZE SOLUTION TO DESTROY PATHOGENIC BACTERIA.

* Observed a very cleaned and organized kitchen at the time of inspection.

The purpose of today's visit was to conduct the first risk factor assessment inspection for a permitted facility that moved from another location in Fairfax County to this location.
  • Critical: No Bare Hand Contact with RTE Foods (corrected on site)
    Observation: A food employee was observed handling the following ready-to-eat (RTE) food using their bare hands: ------observed employee cutting RTE pound cake with their bare hands.
    Correction: Except when washing fruits and vegetables, food employees may not contact ready-to-eat foods using their bare hands. Employees shall use suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods.
  • Handwashing Sink / Accessible at All Times (corrected on site)
    Observation: The handwashing facility located near the baking ovens is blocked with multiple racks preventing access by employees for easy handwashing.
    Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use.

PREOPERATIONAL FINAL INSPECTION
1. Plans were revised after being approved by the Health Department and the new revisions were never submitted to the Health Department for review and approval before construction. Major equipment changes were made and some which were added were never on the original approved plans. Therefore, the applicant shall submit the revised plans to the Health department by no later than December 2, 2013.
2. The number of the three-compartment sink were increased in the new revised plans from 1 to 2, and the mechanical dish washing machine was upgraded from the one that uses 55.5 gallons per hour of hot water to one that uses 68 gallons per hour of hot water. THE APPLICANT HAS DECIDED TO ELIMINATE OF OF THE THREE-COMPARTMENT SINK DURING THIS INSPECTION UNTIL THEY CAN DECIDE WHETHER OR NOT THEY UPGRADE WATER HEATING EQUIPMENT.
3. Smooth, nonabsorbent and washable ceiling finishes have not been installed at the dry goods storage and at the two rest rooms.
*Approval for a Health Department permit is hereby granted contingent on the correction of the above listed items. This inspection report shall serve as your permit until official permit is delivered to you. No equipment changes/replacements/additions are allowed without approval by Health Department.

No violation noted during this evaluation.
