This visit was made to conduct a routine food safety evaluation. Great improvement from the last evaluation!
Please be sure to date prepared items that are not used within 24 hours, and keep track of the 4 hour time period for the sushi rice time as a public health control plan.
Also, when cleaning, pay more attention to the refrigerator gaskets as some of them have debris and black grime on the inside. Other than that I have noticed an improvement in the cleanliness of the kitchen area.

This visit was made to conduct a routine food safety evaluation. The following items require attention:
1) Employee shall wash hands when switching tasks and when they become contaminated. To facilitate proper hand washing, all hand washing sinks must be supplied with soap and paper towels, and be used solely for hand washing.
2) Cooked foods must be cooled from 135 to 41 degrees in 6 hours total, going from 135 to 70 in 2 hours. This can be achieved by separating solid items into smaller containers and spreading out on sheet trays to cool in the walk-in UNCOVERED until completely cooled to 41 degrees F.
3) Store ALL employee items (medicines, care items, phones, jackets, purses, etc) in the designated employee storage are. These items are not to be stored on food preparation counters or shelves with food and/or food contact equipment.
4) Sushi rice on Time as Public Health Control Plan must be labeled to indicate what time it must be discarded (4 hours after cooking/putting out for service)
