To make their wines, they harvest the grapes by hand at night, creating a more gentle and comfortable environment for both the harvest and the harvester. They move the grapes in crush proof transportation, and they use cluster and berry sorting methods which are more tedious, but lead to a better wine. Finally, the grapes are put through a high temperature extended maceration, extracting seed flavor and tannin for the wine. Visitors to the area can enjoy an extensive tour of the facility for a fee which takes you into the cave system for a sample right from the barrel.
