insulation possible in old post and beam house

I have had differing opinions about the possibility of insulating our 200 yr old home. The plaster is intact and the exterior has the orig. wood siding. This means we freeze all winter. I was told the insulation would not have "chambers " to hold the filler. Another suggested putting tyvek on the interior and paneling over it. Help. I am a confused fix-it mom that needs answers. Thank you.
