The Infamous Collard Greeens

I hope my mom never sees this. If see does... Well let's just say I'm in a world of hurt. All inheritence just got left for the state to spend. To set the stage for this little diddy of a southern boy's adventure, I need to explain to even the modern southerner that back in the good ole days everyone new everyone in a small southern town and if you didn't have collard greens on a regular basis you weren't properly cultured. Along with collards, fish were another staple that went on the menu often along side a generous serving of the greens. Some how we had our fish on Friday and didn't get around to having the collards until Saturday. That was the biggest my mom ever made next to giving birth to me. You need to know about my grandfather, her dad. He was a real story teller right out of the 19th century. He could spin a yarn that would sell you a bridge in the desert. Every time he got in the kitchen and started doing a little of the cooking I was right there underfoot. I had to know what he was creating next just in case I needed to visit a neighbor down the street right about supper time. I guess he must have got a little bit annoyed of my constant interragations so when I ask what kind of meat that was he was a putting in the big pot of collards he replied, "Fish Heads". I didn't believe that for one minute. But that was his story and he was a sticken to it. I gave up about 90% convinced he had lost it. But I knew did some creative things too and there were those heads from the fish cleaning the day before. Back then store bought fish were unheard of. Well my mom wasn't in on the collards and fish heads discussion when she handed me a dollar and told be to go downtown and get my hair cut. Now that's where her 2nd big mistake came in. She had no way of knowing that the news of the day at the local barber shop was that my family was having "Fish Heads & Collards" for supper that Saturday night. I'm not sure how many calls she got but I'm supposing it was a few to many..... After a few weeks she made a full recovery until my next juvenille caper. I still to this day wonder just what that was in those collards but it didn't taste a bit like fish...

I like vinegar in my collard greens, but I really, really prefer mustard greens..and I really, really enjoy your blogs more

I remember the smell of collard greens coming from my friends grandmas house...I swear I think she cooked them everyday..
