    Detailed cleaning is needed on the exterior of equipment, the undersides of the fryers and the shelving in the front storage area.
  • Floors, walls, ceilings properly constructed, clean, in good repair
    Repair and reseal all small holes in the FRP throughout the facility. Repair and reseal the damaged or lose baseboard tiles throughout the facility. Detailed cleaning is needed below equipment and shelving along baseboards and in corners.
  • Food & non-food contact surfaces easily cleanable & in good repair
    Repair the condensation issues in the walk in freezer. No evidence of food contamination was found today, but as condensation is considered wastewater do not store food items below the damaged or leaking areas until the leaks are repaired. Reseal all joints between pieces of equipment, between equipment and the walls, and on the splash guard in the can wash area..
  • Proper employee beverage or tobacco use
    Several employee beverages were found stored improperly (on food prep surfaces and above food items for sale in the walk in cooler). Store all food items on lower shelves below all food contact and storage areas with lids and straws.
  • Storage spaces clean, storage above floor; approved storage for mops, brooms, hoses & other items
    Several items were found stored on milk crates throughout the facility. Milk crates do not meet the ANSI sanitation standards and do not allow for proper cleaning. Keep all items in storage above the floor on approved shelving (6"" if mobile and 12"" if stationary) to facilitate proper cleaning.
  • Utensils & equipment properly stored, air-dried, handled
    Several plastic pans were found stacked wet. Allow more time for proper air drying before stacking.
  • Thermometers provided and accurate
    The thermometer provided for testing food temperatures was not properly calibrated. A metal stem-type thermometer accurate to 2F (1 C) shall be available to check food temperatures. The thermometer was re-calibrated.

    All chemical bottles must be labeled. There were 3 bottles without lables/illegible.

    General Comment. Thank you for replacing the shelving in the walk-in cooler. There is still alot of condensation build-up in the walk-in freezer. The door on the bread warmer is cracked.
  • Food protected during storage, handling, display, service & transportation; written notice for clean plates
    General comment. Employees need to be careful where trays of food are being placed. Observed an employee put a tray of food on the soda machine drain.
  • Storage spaces clean, storage above floor; approved storage for mops, brooms, hoses & other items
    General comment. Need additional storage racks/dunnage racks. There are several items being stored on milk crates in the coolers.
  • Proper cold holding temperatures
    Hot dogs-49-50F The upper drawer of the cabinet cooler is not keeping the hot dogs cold enough, the bacon below it was 46-48F (general comment last inspection). The make unit for the milkshakes was not maintaining safe food temps (cheesecake 52F, strawberry preserves 53F, air temp 53F). The cheesecake is the only food product that may be potentially hazardous, other foods are syrups or preserves. Do not recommend serving cheesecake unless it is definitely self stable or has only been off temp no more than a couple of hours.

    Need to improve floor cleaning beneath equipment and floor drains. Need to clean the ceiling around the ac vent near drive through.

    There was an employee beverage sitting in a pan of single service items (fry wrappers). Need to keep employee beverages in cups with lids and straws stored below all food contact surfaces. Employees need to remove their aprons before using the bathroom. Observed employee use restroom with apron on and not change apron before handling food. CDI- Beverage was thrown away and employee was instructed to change aprons.

    General Comment. Overall cleaning looks good. The area between the splash guard of the soda dispener and the drain needs cleaning.
  • Proper cold holding temperatures
    General Comment. Some cooler repairs were done earlier this morning. Some fo the hot dogs in the drawer cooler were 48 F, recommend checking this cooler to make sure that it is going to keep the foods cold. The food on the other side of the cooler was 45 and below.
  • Meets illumination requirements; shielded; lighting & ventilation clean & in good repair
    General Comment. The light shields near the drive through needs cleaning.

    Some of the shelving in the walk-in cooler is chipping and rusty in places. There is a lot of frozen condensation build-up in the walk-in freezer, recommend having gasket and panels checked to make sure no air from outside of the cooler is being pulled in. The wire rack near the ceiling in the dry storage area are corroded. The splash guard between the utensil sink and the grill needs to be recaulked.

    General Comment. Do not put cups stored upside down on the drain for the soda dispensers. There are several new employees working today, be sure every one is trained on food safety, be sure every one uses scoops for beverages.

    General Comment. Overall equipment cleaning looks good, need to remove the cardboard box covered with aluminum foil beneath the prepared condiments.

    Some cleaning is needed on walls and ceilings.

    The drain at the utensil sink is leaking. The doors of the lowboy cooler have been replaced but still do not do not shut well, the outside of the cooler is warped and is missing the cover for the compressor. A new cooler will be more effective in mainting safe food temperatures and protecting the food from contamination. Need to have the automatic shut off switches replaced on the ice bins at the beverage dispenser.

    There are alot if items on the floor or on milk crates, an order came in today, but the facility could use more dunnage racks for bulk storage items.

    There were flies present in the kitchen today. There are alot of flies around the dumpster pad, recommend focusing pest control efforts in this area as well as the kitchen.

  • Floors, walls, ceilings properly constructed, clean, in good repair
    General Comment. Some damage has been done to the floor when the renovations were done on the walls, need to have the crack on the chef's line and the broken tiles repaired.
  • No cross-connections
    General Comment. The cap for the back flow prevention device has been knocked off the hot water supply at the outside can wash. Need a Y-mixer for the hot and cold water at the outside can wash.

    Need additional storage racks in the walk-in cooler and freezer. Food and dry storage items are shelved on milk crates.

    There is condensation in the bottom of the milkshake cooler, need to have this cooler checked. The shelving in the walk in cooler has chipping coating. The drain at the utensil sink is leaking. Need to wrap the drain line in the freezer with pvc wrap. The doors of the lowboy cooler do not shut well, there are alot of pop rivets on the tops of the doors and the handles are not made for food equipment.

    There was no measurable concentration of sanitizer in the spray bottles. There were a couple of cleaned pans with food debris on them. CDI- Sanitizer was re-mixed and dirty pans were pulled.
