- Proper hot holding temperatures
All Potentially hazardous food shall be maintained at 135?F or higher at all times, as required. Sausage patties sitting behind the flat top grill, not under any temperature control, at 120-125. The sausages need to be held under mechanical temperature. This may be accomplished by placing a pan of water under the pan of sausage on the grill or stove, or by placing the sausages in the hot holding unit.

- Proper cold holding temperatures
G.C. Do not store an entire flat of eggs on the counter during breakfast slow times. Only bring enough eggs that can be used quickly and will be able to maintain temperature.
- No cross-connections
G.C. Hose attached to faucet without the proper backflow prevention device installed. Currently the can wash has a back flow device that is not designed for continuous pressure. This device needs to be replaced with a Watts H7C or H7 that is designed for continuous pressure. Until this is installed the hose needs to be removed from the spigot or the spray nozzle needs to be removed from the hose.
- Food contact surfaces cleaned & sanitized; approved methods and sanitizers
G.C. The sanitizer needs to be available at the cook line as well as the prep areas.
- Thermometers provided and accurate
G.C. Thermometers not accurate or broken. The thermometer should read 32 in ice water. Employees should check the thermometer regularly to ensure that it is working properly. A thermometer is to be provided at all times at the sanitizer vat of the 3 compartment sink to ensure that the sink is at the proper temperature before sanitizing the dishes and to ensure that it maintains the proper temperature throughout the day.
- Clean clothes, hair restraints
Hair restraints are required when working with food. All employees preparing food are to wear hair restraints. Aprons are to be changed daily and are provided to employees to protect their clothing.
- Hands clean and properly washed
Observed employee not washing hands when required. Employee preparing food did not wash their hands during the inspection. Wiping hands on aprons is not hand washing. Employees must improve on hand washing .

The gaskets on the refrigerator units are broken and need to be replaced. The basket for the 3 compartment sink is damaged and needs to be replaced. The basket for the sanitizer vat of the 3 compartment sink is to be clean. The drain line of the walk-in cooler needs to be insulated and wrapped in Pro-Jac. The 2 door reach-in cooler is leaking at the drain and needs to be repaired.

General Comment. The sanitizer in the spray bottle was a little too strong. For the size bottle being used it only requires about 3-4 drops of bleach to mix 50-100ppm Chlorine sanitizer.
