Warewashing facilities maintained; test strips used
General Comment. Chlorine test strips are provided for the dish machine, need quat test strips for the sink.
Refrigeration and freezer capacity sufficient
General Comment. Need to add more refrigeration near the chefs line. Management is planing to add a new cooler, please provide a cut sheet for any new equipment.
Food contact surfaces cleaned & sanitized; approved methods and sanitizers
General Comment. Utensil cleaning looks good. The inside of the ice machine needs detail cleaning behind the diverter.
Proper cold holding temperatures
Lasagne 65-70F, batches were being kept on the counter for quick use during lunch. Need to keep all potentially hazardous foods under time or temperature controls. Ham 50F, cheese 52F that open to make unit across from the grill is not keep food products cool enough, recommend keeping the make unit top covered when it is not in use. Many of the foods in the walk-in cooler are around 44-46F, the air temp is 40F. Try to keep the cooler door closed as much as possible.CDI-Lasagna must be reheated to 165F. Corrective measures are to be implemented to help maintain safe food temps.
