    Do not hang employee coat on wire shelving used to air dry food containers.
  • Floors, walls, ceilings properly constructed, clean, in good repair
    Floor cleaning needed under equipment , in corners and at baseboards. Wall cleaning needed at can wash.

    Handle on pepsi drink glass door upright has a broken handle, replace. Also need to replace a split gasket on the door of the salad make unit.

    Need to clean cabinet under pepsi machine, refrigeration gaskets, shelving under and above pizza work station, one shelf in the cooler, can wash and inside of make unit refrigerators.

    The domestic wine refrigerators are not approved for use. Need to use NSF approved refrigerator. The pepsi glass door refrigerator is not approved to store food, it is approved for bottle drinks only. Water in bottom of pizza make unit, have this repaired as soon as possible.

  • Non-food contact surfaces clean
    Cleaning is needed on the following: on the inside bottom of the pizza unit, on the gaskets of the pizza unit, on the inside bottom of the sandwich top unit, around the lid of the sandwich top unit, and on the shelf below the pizza table.
  • Food & non-food contact surfaces easily cleanable & in good repair
    General Comment - Replace all chipped knives and utensils as needed, a couple of damaged knives were found today. / The stainless steel caulk on the shelf under the pizza table is coming out and needs to be replaced.
  • No cross-connections
    General Comment - The back flow preventer that was taken off the can wash must be replaced.
  • Proper cold holding temperatures
    In the top of the pizza unit, the pepperoni ranged from 45-53 degrees, the tomatoes ranged from 45-49 degrees, the chicken strips ranged from 47-52 degrees and the sausage ranged from 46-49 degrees. All food in the bottom of the unit was 43 degrees or below and the air temperature was 35 degrees. All cold food must be 45 degrees or below at all times during storage. Do not overfill the containers in order to maintain the proper food temperatures.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    Most of the plastic containers checked today were not properly cleaned. There was either food debris on them or adhesive and pieces of labels. All dishes and utensils must be properly cleaned. Remove all food debris and labels prior to storing them. (repeat from previous inspection)

    The dumpster door was left open. Keep the dumpster closed at all times when not in use.
  • Single-use/single-service articles properly stored, handled, used
    The sandwich paper trays had a lot of food debris and crumbs in them and on the sandwich papers. Keep all single use, food contact papers and containers clean at all times. (This item was general commented on the last inspection)

    The two residential bottle coolers behind the counter are not approved for use and must be removed from the facility. If a bottle cooler is to be used in the store, it must be a commercial unit.

    Better floor cleaning is needed underneath equipment and along the baseboards.
  • Non-food contact surfaces clean
    Cleaning is needed on the following areas: on the inside bottom of the pizza unit, around the lids on the top of the sandwich top refrigerator, on the front of the gaskets on the pizza table, on the lower shelf at the pizza table and on the warming rack beside the register.
  • Single-use/single-service articles properly stored, handled, used
    General comment - There were crumbs on the paper in the paper trays and a couple of single use containers were improperly stored. Keep the paper trays wiped down and the single use containers inverted to protect the food contact portion of these items.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    The nozzles on the soda machine had excessive amounts of mildew and algae build up on them. Recommend cleaning each day. / There were several of the plastic containers that had stickers and adhesive residue on them today. This must be completely removed when washing. Recommend removing the stickers before the containers get wet.
  • Food & non-food contact surfaces easily cleanable & in good repair
    The refrigerant line in the walk-in freezer is not properly wrapped causing condensation to form and drip on the boxes. This needs to be corrected and no open containers of food should be placed under the refrigerant line until repaired. / The wrapping on the refrigerant line in the walk-in cooler is torn and needs to be re-wrapped. / There is a small water leak around the drain pipe of the prep sink that needs to be repaired.

    Both of the handsinks need to be caulked.
  • Non-food contact surfaces clean
    Cleaning is needed on the shelf below the pizza table and around the lids of the salad/sandwich make unit.
  • Food contact surfaces cleaned & sanitized; approved methods and sanitizers
    General Comment - There are several containers with stickers and sticker residue on them today. Be sure to remove all adhesive and stickers from containers when cleaning. This item will be re-checked on 3/24/09.
  • Proper cold holding temperatures
    In the top of the pizza table, the pre-portioned chicken strips were 46-50 degrees and the pepperoni were 47 degrees. In the top of the salad/sandwich make unit, the pepperoni were 47-49 degrees and the chicken strips were 48-50 degrees. In the pizza table, do not fill the containers past the line in the container, and on the make unit, recommend using deeper pans and placing potentially hazardous foods in the back row of the table. All cold food temperatures must be 45 degrees or below at all times during holding.
  • No cross-connections
    The backflow preventer on the splitter at the can wash must be placed after the valve, not on the end of the faucet. When a valve is placed after a vacuum breaker, a pressure is created keeping the vacuum breaker open. Remove the backflow preventer from the faucet and place it after the valve on the splitter as was instructed during the permitting process.
