    General Comment. Floor cleaning is better, but could still use some work in the walk-in coolers.
  • Utensils & equipment properly stored, air-dried, handled
    General Comment. There were a couple of pans that were stacked wet.

    The coolers in both the grill area and the deli area were not working properly. There is a leak from the condenser drain line in the walk-in freezer. The drains for the ice machine need to be hard plumbed and bracketed of the floor or wall to allow for cleaning, also be sure there is an air gap between the end of the drain line and the floor drain.
  • Proper cold holding temperatures
    The preportioned bowls of melon and grapes were 50-55F-recommend keeping the bowls down in the ice. The make unit at the deli area was not maintaining safe food temps: chicken salad 56F, tuna salad 60F, ham 51F. These products were voluntarily disposed of.

    General Comment. The chemical bottles were labeled, but the labels were fading and need to be re-labeled.

    General comment. The drains for the ice machines in the serving area need to be cut on an angle or notched so there is an air gap 2 inches above the floor drains.

    Repeat. Equipment cleaning needs to be improved. Examples include: the handles and outsides of equipment, insides of reach in coolers.

    Repeat. Need to improve floor cleaning beneath the shelves in the walk-in coolers and in the dish room. The walls in the serving line need to be repaired, the corners are damaged. Need to clean around the legs of equipment more thoroughly. Need to clean behind equipment more thoroughly. Need to dust ceilings around AC vents. The walls in the can wash need more cleaning.Thank you for replacing the damaged floor tiles and repainting the walls in the serving area.

    General Comment. The sanitizer in the spray bottle was a little too strong.

    Need to clean some of the drawers more thoroughly. Need to clean inside of the small cooler in the grill area. Some of the outsides of equipment could use some extra cleaning.

    Repeat. Lighting is low in several areas of the kitchen, especially over the 3 compartment sink, the deli area, and some of the prep areas 10-40foot candles.

    General Comment. There is one split gasket on the 2 door upright cooler used for deli meats and salad type items in the back of the kitchen.
  • Meets illumination requirements; shielded; lighting & ventilation clean & in good repair
    Lighting is low in several areas of the kitchen, especailly around the utensil sink.Need to clean the hood vents over the the fryers and the return air vents.

    Repeat. There are a few cracked floor tiles especially in front of the walk-in coolers. Need to improve floor cleaning eneath the shelves in the walk-in coolers and in the dishroom.The walls in the serving line need to be repaired, the paint is chipping and the walls are damaged. Need to clean around the legs of equipment more thoroughly. Need to clean behind equipment more thoroughly. Need to dust ceilings around AC vents.

    The sanitizer in the spray bottle had non measurabel concentration of sanitizer. Chlorine sanitizer need to be mixed to at least 50-100ppm. The new racks for the dish machine do not catch on the conveyor, pushing the racks through manually may not allow for enough contact time with the hot water for sanitizing. Recommend using the old racks until either the conveyor is adjusted or new racks are ordered. The pressure gauge is stuck and the rinse arms are full of debris CDI-new sanitizer was mixed, and the spray arms were cleaned, the pressure gauge is in process of being repaired.

    Lighting is low over part of the prep areas in the kitchen 28-45FC. Lighting is very low around the three compartment sink 10-11FC. Lighting at workstations should be at least 50 foot candles. Be sure to replace any burned out or dull bulbs.

    Thank you for getting the items listed on the last inspection repaired. The lid for the left ice machine is cracked. The left door of the salad upright cooler has a split gasket. Some of the shelving in the walk-in cooler is showing signs of wear and tear. The dish machine doors are cracked where the doors meet the machine.
