An employee beverage was found on the top rack in a reach in cooler unit with no straw. All employee beverages must be kept on lower shelves away from all food contact areas with a lid and straw. The use of screw top bottles is discouraged due to the constant manipulation of the mouth contact area by the employee.

Detailed cleaning is needed on the drink machine nozzles in both the drive through area and on the front service line. Several pans and utensils were found dirty at the time of this inspection. Take more time when cleaning and sanitizing these items.

Detailed cleaning is needed on: the exterior of equipment, the wire shelving throughout the facility (this includes the walk in refrigeration units), the undersides of the fryers, the legs and lower shelves of tables, and the joints between equipment and walls.

G.C. Be sure to keep all single service cups either covered in the dispenser or in their original plastic sleeve (pulled up).

G.C. Recover the condensation drains in the out side freezer with a smooth easily cleanable material.

G.C. The drain plug on the card board dumpster is missing, replace it.

G.C. The spatula used for premium bacon was found stored in pan of bacon grease. Store in use utensils in an approved container with a lid, in the product, or temperature controlled (at or above 135 F / at or below 45 F).

Repair or replace the damaged / broken floor and base board tiles throughout the facility. Re-caulk the baseboard tiles to the wall in the walk in cooler. Detailed cleaning is needed underneath equipment and shelving, along base boards, and in corners. Wall cleaning is needed in the rear prep area and above the 3 compartment sink.

Two containers of chili base were found stored on the floor in the walk in cooler. All food items must be stored above the floor on approved shelving.

Detailed cleaning is needed on the tops and sides of equipment, legs and lower shelves of prep tables, and the wire racks in areas. Cleaning is also needed on the insides of the reach in units and the undersides and legs of the fryers, and the joints between equipment and walls.

Floating debris was found in the sanitizer buckets. Cleaning is a two step process you must first clean the area then sanative it. Detailed cleaning is needed on the drink machine nozzles.
