Employee moved dressings to walk in cooler. Also observed large bin of pancake batter held at room temperature and establishment is not using time as a way to control temperature. Employee indicated batter was made less than four hours ago and left over batter is discarded.

Also observed 6 live roaches, in various stages of development, on prep table top behind table slicer. Also observed 6 live roaches, in various stages of development, on sticky bait tape on floor below prep table and 4 dead medium roaches directly on floor below same table along wall. Operator immediately killed all roaches on prep table and equipment. Note that a tall container of gravy was cooking on this table when observations were made.
  • Critical. observed roach activity as evidenced by 1 large roach found on dish machine sanitizer container. Operator immediately killed and cleaned up live roach.
  • Critical. Observed roach activity as evidenced by 20 live and 4 ded roaches, in various stages of development, found on floor and sticky bait strips below soad bag and box stations and beside 2 door True upright cooler.
