  • Critical. Ready-to-eat, potentially hazardous food prepared on site and held more than 24 hours with not properly date marked. 2 containers of fried chicken in walk-in cooler; manager states were prepared on Wednesday.
  • Critical. Observed potentially hazardous food cold held at greater than 41 degrees Fahrenheit. Cooked chicken strips, 2 buckets in walk-in cooler, date dot reads Wed, at 46degF. 2 containers of fried chicken at 46degF.
  • Critical. Observed food being cooled by nonapproved method. Chicken placed in walk-in cooler in deep buckets without properly cooling, while covering tightly with lids. Over 6 hours later, chicken at 46degF.
  • Critical. Cooked potentially hazardous food not cooled from 135 degrees Fahrenheit to 41 degrees Fahrenheit within 6 hours. Chicken strips and fried chicken 2 containers each, prepared on Wed., held over 6 hours in walk-in cooler, temp at 46degF.
  • Critical. Observed boxes of coater stored on dry storage room floor.
  • Observed ripped/worn tin foil and cardboard used as shelf cover for single-serve items in hanging crates.
  • Observed gaskets/seals on cold holding unit in poor repair at reach in cooler across from soup stove.
  • Wet wiping cloth not stored in sanitizing solution between uses. Repeat Violation.
  • Critical. Observed several soiled reach-in cooler gaskets.
  • Critical. Observed soiled reach-in cooler gaskets of ice dream cooler. Black spotting.
