  • Basic - Clean utensils or equipment stored in dirty drawer or rack. Spatulas and strainers store in bus bin that has heavy accumulation of grease inside and outside of container. On bottom shelf of prep table in cook line. Corrective action taken, employee placed container in triple sink to be washed. **Warning**
  • Basic - Equipment in poor repair. Chest reach in freezer lid broken and held with wires. Also, screen on rear door in kitchen is torn. **Warning**

Manager killed 6 of the roaches, one went behind metal trim next to hand wash sink. Also observed roach egg on handle, manager discarded it. Follow up required per C Tucker. **Warning** At call back, observed one live roach coming from underneath of steam table next to hand wash sink in cook line, killed on site. Also, behind the steam table were 3 plastic crates, when moved 5 live roaches were found, all killed on site and crates were discarded. Manager stated she has scheduled pest control to come two weeks from now. 24-hour follow up required per C Tucker.
