CAJUN RICE placed on hot hold steam stable before product reached 165f steam table water was found to not be at proper temperature also water was 128f / cajun rice and pulled chicken were found at 112f ( IMPROPER REHEATING )/ Corrected On Site.

  • Observed WALK IN COOLER door not SELF CLOSING missing mechanical CLOSING arm.

  • Observed clean utensils/equipment stored in dirty plastic containers full of dirt and nesting water in dish rack near 3 comparment sink.
  • Critical. Hot water not provided/shut off at employee hand wash sink in prep area near bisquit make station . Corrected On Site.
  • Critical. Observed live flies in kitchen.
  • Observed HEAVY dust on air conditioning vent covers in rear area / above where flour is stored.
  • Wet mop not hung to dry.
  • Critical. Portable fire extinguisher not properly mounted at least 4 inches off the floor and the top no higher than 5 feet off the floor found on ground in mop sink area. For reporting purposes only.
  • Critical. License expired more than 30 days, but not more than 60 days, after expiration date.
  • Critical. Manager lacking proof of Food Manager Certification.
  • Critical. No Certified Food Manager for establishment.
