- Critical. Observed food being cooled by nonapproved method. Home made macaroni and cheese cooling in walkin cooler covered. Temperature of macaroni was at 101 F. Degree. Cooling in cooler less then 2 hours. Corrected On Site. Operator put macaroni & cheese in cooler and quick chilled to 41 F. Degree.
- Critical. Potentially hazardous food prepared from/mixed with ingredient(s) at ambient temperature not cooled to 41 degrees Fahrenheit within 4 hours. Hashbrown Casserole goop prepared at 7:00 AM in cooler over 4 hours. Temperature of 52 F. Degree. Corrected On Site. Hashbrown Casserole goop was discarded.
- In-use utensil for nonpotentially hazardous food not stored in a clean, protected location. Ice scoop stored on top of dusty ice machine. Corrected On Site.
- Critical. Observed food employee wearing jewelry other than a plain ring on their hands/arms while preparing food. Cook wearing a watch while in preparation of food. At cook line. Corrected On Site.
- Clean soup spoons not inverted or in a protected manner. At servers station. Corrected On Site.
- Critical. Hot water not provided/shut off at employee hand wash sink. At handwash sink located in dish area, back grill area and both employees restroom located in kitchen. Ambient temperature is between 70 F. Degree and 80 F. Degree. Facilty has hot water at all other handwash sink.
