Observed the following items held at cold hold prep unit and operator stated they were held overnight in unit: pooled eggs 46°F, raw chicken 46°, raw pork 47°, raw beef 47°. At end of inspection about an hour later, observed temperatures unchanged but establishment had been through peak lunch service. Operator stated she would monitor.
  • High Priority - Toxic substance/chemical stored in food preparation area with potential to cause cross contamination. Observed spray bottle of "greased lightning" stored on table next to in-use bowls and containers of sauces. **Corrected On-Site**

  • Basic - Raw animal food stored above unwashed produce. Observed bowls of raw shrimp stored over sweet potatoes in walk in cooler.
  • High Priority - Fresh garlic-in-oil/margarine/butter or product containing fresh garlic-in-oil/margarine/butter mixture held at greater than 41 degrees Fahrenheit. Observed fresh garlic in oil mixture held on cart near cookline at 53°F. Operator stated it has only been out since about 11am and their bulk mix is kept in the walk-in cooler. Inspector observed bulk mix kept in cooler and advised establishment that garlic in oil mix can be kept on cart during food production but when not cooking to keep the mix in the cold hold prep unit or in the walk-in cooler.
  • Intermediate - Handwash sink not accessible for employee use due to being blocked by garbage can. Observed at handwash sink mid-kitchen near the ice machine.

Observed beef meatballs on table in kitchen at 60° and out 15 minutes per owner. Meatballs were moved to walk in cooler. Observed raw chicken on ice in cold hold prep unit at 52° out about an hour per owner. Ice under chicken was refreshed. At end of inspection, observed meatballs at 53° and raw chicken at 36°.
