Well the last ACS survey indicated less than 40% of grads are employed full time and of those 50% are working some crap job in academia. So we are talking ~20% employment.
Yes the field is vast but all they all suck. Food, Oil, Cosmetics, Chemicals, and pharma are now all hiring people as perma-temps for no benefits. There are a minority of decent jobs available but they typically are looking for someone with 10 years experience in extremely rare specializations like formulations or certified flavorist where they can't get away with doing permatemps. Unfortunately there is no degree, and few internships that will allow you to enter these specializations.
I really have no inclination to teach. I did it a bit in college as a TA and would rather not teach a topic I hate or inspire students to study a topic that will likely lead them into poverty. If teaching is the only option then that makes science no different than any of the other useless BA degrees.
