Let's share our favourite African recipes.

Considering the huge amount of regional diversity in cusine, I'd like to concentrate on West African foods - especially sides and sauces.

One of my favourite additions to a meal is fufu. I make it according to the recipe below. While it is not strictly African, it is derived from the African fufu.

Boiled plantains make a great additions to many jollof (rice) recipes.

Maybe better in the food forum. My favorite is Senegalese FOOOOD! Beautiful people and lovely food.

We have our own version based off this recipe in our household using beef, potatoes, and barley. It's one of my favorite meals.

I've been dabbling in African cooking the past 6 months, using recipes from Betty Crocker's New Int'l Cookbook.

Jollof Rice Ghana/African Chicken & Rice Casserole: Awesome!

Moui Nagden/African Beef & Rice: Another good one!

Zilzil Alecha/Beef in Pepper Sauce: Just made that one, another good one!

Mtuzi Wa Samaki/Fish Baked w/Tomatoes & Spices: Excellent!

I did try a Vegetable Fry Dish which called for blending in 1/4 cup of peanut butter into it, and that one just didn't click at all! Into the trash it went!

I don't think this particular thread should be transferred to the Food Forum!

Puerto Ricans also have a similar dish called mofongo.

When it comes to Dominican Republic, Dominicans are extremely creative with their plantains and culinary dishes, especially plantain based dishes.

Platano hasta la muelte, hijueputo CARAJOOO! ya tu sabe.

Now I'm really hungry.
