Sierra Leone--Had roomates from college there.
Nigeria-Yoruba culture is interesting, in my experience as an American, the Yoruba people I met in the U.S. were very friendly and outgoing the Easterners were not as friendly and very standoffish..
Benin-Interested in the Voudu and Zangbeto celebrations.
My list has changed since posting this three years. For one, I was actually able to visit South Africa, Madagascar, Mauritius, Kenya, Ethiopia and Madagascar. NEW LIST:
SEYCHELLES - I really liked Mauritius/Reunion, and I'd like see Seychelles for a comparison. Downsides is they local population of the entire country is only something like 150,000 people, which means it might be better ONLY for the beaches without much culture/interaction with locals outside of a very touristic-type of experience. Still, I'm curious about the country/island.
ERITREA - Ethiopian Airlines just connected the locations by flight. Also, the country seems quite unique, much like Ethiopia.
ETHIOPIA - I've been twice, and I'm eager to go a third time. I've never had much more than 4-5 days tops to visit, which is not enough for a country like that.
I know the feeling. I've been to 48 countries (including, it so happens, the five on your list). But I'm really not finding so much desire to visit the rest, mostly touristy islands.
Ghana - familial background
Ethiopia - interesting fascinating country and history
Madagascar - Seems to be unique
Cape Verde
Gambia - more accessible?
Hard to keep this to only five. There are several other countries: South Africa, Namibia, Somaliland, Mali, Mauritius that could have been in place of the last two on my list.
