Squirrel is one of the sweeter, non-gamey tasting wild game meats. After the woods empty of the deer hunters at the end of January, I spend the entire month of February hunting squirrel for the pot. Unfortunately, my spouse does not share my enthusiasm for squirrel. Oh well, at least I don't have to share.

I'm not much on eating a tree rat.

Skin a rat and skin a squirrel, lay them side by side, you cannot tell them apart.

So, perhaps a properly-prepared rat would be pretty tasty. Just kidding. I've tasted squirrel and it was pretty good, but have to admit it was kind of weird thinking about what I was eating. I don't believe I could knowingly eat a cooked rat.

Hey all - Just letting you know for New Years Eve, I had Black-Eyed Peas, Turnip Greens, with Hog Jowels. All I can say is - FANTASTIC. Gotta' run to Wal-Marts to buy red spray paint, so I can do my neck....

You gotta have some real southern cornbread dressing too. Anytime there is a get together or family event, there must be a pan of dressing. It amazes me to watch northerners on TV try to cook dressing and put fruit and nuts in it. Seeing apples in dressing makes me want to gag. lol

While I was in the army, stationed in Tennessee, a couple who were from Alabama hosted a BBQ. They roasted a pig in the ground and had this fabulous sauce. Hot Slaw is what I think it was called. I would love to have some of that again. Does anyone know what I am talking about?
