I remember reading a cookbook and part of the title was "... and Can She Make a Roux".

First, clarify the butter in the saucepan and then, mix in the flour.

Right, no need to clarify butter.... 1 T butter or fat per 1 T flour, swirlee with whisk....add 2 cups liquid per T, I use beef base or chicken base to match,seasonings....can use milk or cream for liquid depending on what doing...never had a problem with 'gravy'...God havin issues yet...as I can be gravy, roux, bechamel...or if want hollandaise...loves soups, stews, gravies....especially on grilled meat...no offense....sorry God....

Personally, I use corn starch for gravy as it thickens it up quite nicely, thank you very much!

But touchy...I use that for stir-fry sauces...Your welcome very much...but I also like bacon drippings for soup starter sauces...

As do I....corn starch in for roast gravy and turkey. Flour for regular steak.

Deb...I just slow-cook the roast in blackberry Merlot...usually put it in early morn then let it slow cook for 6-8 hours. Toss in carrots, baby potatoes, perhaps a wee bit of sage....then make up a gravy utilizing corn-starch. Num yummies!

Then add cumin and/or curry powder, heat until slightly thickened - lo and behold, curry.

Serve over rice with chopped apples, raisins, chopped boiled egg, shredded coconut, peanuts, mango chutney, just about anything else you want. GOOD!!

On the subject of tools. I just couldn't resist. Along with a taping knife I got some Makita 18V LiIon tools. Drill, impact driver, trim saw, reciprocating saw, right angle grinder, and some stupid light, nice kit but they always have to throw in that light. It's a nice start.

Also got 6" and 8" slip joint pliers, 1" putty knife, hex key set,

Drywall joint compound, tape, they gave me two pencils free.

They even had a 16oz claw hammer today, but since I didn't even use the 8oz I figured I'd wait, even though I know I will need it.
I discovered one trick - find out when they will be getting an order in and get to the store first, before everyone buys them out of the new stuff.
I couldn't find a white duxplex outlet cover, and a white hex box cover, maybe next shipment. Making friends with the guys behind the counter, this can only be good.

BTW - I was given a fortune cookie last night and the fortune:

"The star of riches will shine on you beginning next month"

I wonder if that means more tools, seeing a polar bear, making new friends, getting a real job (uuuugggghhhh), winning the lottery (maybe I should play). So many possibilities.

Also - I do have a carpentry job coming up this week. I am going to check it out at 1am this morning. This one's for pay, not barter.

I might put off the drywall job to take this one - it's kind of an urgent need rush job.

I was given the use of a 6 drawer dresser - I just need to move it.

Things are definitely looking good.
