I've been to VIP, it's probably the best Korean restaurant in Anchorage I agree. It's somewhat authentic, just not that great compared to some in San Francisco, New York, or Korea. Korean food in Anchorage is decent for the size of the city. Someone really needs to open a good Chinese restaurant that doesn't have sweet and sour something. Some nice dim sum pushed on carts made fresh each morning would be great. =)

Funny you should mention it. My wife and I just went there for dinner tonight for the first time. The food was quite good, though it wasn't quite what I was expecting. For some reason I was thinking it would be traditional Indian fare. But the place had a more Nepalese/Tibetan theme. And actually they describe themeselves as "Himalayan fusion" on the menu.

What Do I know?: Namaste Shangri-la - Anchorage Nepali, Indian, Burmese, Tibetan Restaurant

Yes, there are certainly better Korean places in some of the larger metropolitan areas like SoCal. But I'll take whatever I can get. And I couldn't agree more on the lack of REAL Chinese food. However, at least we have Charlie's Bakery. They do serve Shumai and Hargow (which are pretty darn good) and it's the only place in Alaska that I know of where you can get the Hong Kong style pan-fried noodle chow mein.

I'm not getting the 'no diversity' part either. I live in Fairbanks and between the local long-term residents, the high percentage of young military families, and the university we have a lot of diversity. Alaskans as a whole seem pretty accepting once you're past the cheechako stage, sort of like you gain some credibility just for making this place your home. The Asian Americans that I know are just as valued community members and leaders here as anywhere else I've lived...

While Anchorage may look a lot like your home outside it is nowhere like it. I recommend a summer visit and make some friends here. If Alaska is made for you, you will know it. You won't be able to say why but you will feel it. Then you will go back home, get your things and head back up as soon as you can. I recommend a late May or early June arrival for weather/work reasons. And, if Alaska is not for you, then you will have had an adventure of your lifetime and made friends in the Land of the Midnight Sun.
