Rinse it well. Deep fry until crispy. Good snacks in the winter.

Hooligan have come and pretty much gone already up the Stikine near Wrangell. A better crop this year than we've seen in 10.
The only way to eat that first batch of hooligan is on the bank of the river with a bunch of friends, frosty beer and a cast iron skillet over the campfire. Then you know it's really spring!!
And they're great right outta the smokehouse!

Not yet, it is a tad early. Mid- to late-May is the best time for hooligan on the Susitna and Yetna Rivers.
