Judging by the responses , and thank you all again!, I think we will do fine too. We are FAR from being snobby and actually choose to live within our means rather then dive into debt to keep up with the Jones's. The wife hates makeup after 20plus years of wearing it and now that she is working from home and will there too, her idea of getting dressed for work is putting on an over the shoulder boulder holder.
Now the countdown begins and i "think" i have found the perfect house on the listings that i hope stays till i get there in a little more then 2 weeks! Granny is going to scout it for me ! Thanks again!!!! If it is as good as advertised i might have to pay her to stay in front of it and act like a lunatic neighbor to keep others away!

You're going to do just fine. You're moving to a different part of the state that I'm in, but you're more than welcome to stop and visit on your way up; I'll make ya my famous half smoked salmon fetticini (and I make my own pasta for this by hand)
I'm glad that things are going well for you and your wife.

Till now i have stuck to mass production cooking for the kids etc. Now that we will be alone she is wanting some special meals!

Red Queen, not to jump your conversation, but...
for the last I donno... 7 years? FoodTV on tv and internet has been my favorite, short of passion. The original Iron Chef shows, Mario Battali. Alton Brown and his "Good Eats"!!!
It is different these days, not so purist and ground breaking, but still mouthwatering!

My family's been in the gourmet seafood business for far more than seven years.
Those televison shows had to get their ideas from somewhere, I suppose.

Mmmmm...smoked salmon fetticini. Tried it for the first time at Chena Hot Springs. It's to die for.

Socal4now said humbly "amateur only" and I thought to myself there is no shame in that
Where there is passion, success will follow! And Foodnetwork is an awesome visual aid to free one's "amateur" self image. It did wonders for me. Especially after seeing Chefs fumble on many an occasion. We're all human afterall.

What's even better is half smoked salmon fettucini, and it really needs to be Kings for an optimal result. A touch of pesto will put you in heaven.
