Speaking of polenta. Anyone know where I can get some? Freddy's doesn't seem to have it.

Deep fried salmon is good made with beer batter!

I never did find it there either...maybe Safeway? or have to make your own...

Default polenta

We make polenta all the time. I get Bob's Red Mill raw polenta in the health sections of Carrs, Freddies, Natural Pantry or New Sagaya:

Corn Grits Polenta - Bob's Red Mill

Or I get the tubes of ready-made polenta in the same health food sections. Then we just slice & fry up in olive oil:

Last night I went to a buddy's house to watch the game. They had corned cured a moose brisket. I swear this thing looked and tasted just like store bought corned beef. Except it had less fat. Same color same texture and no gamey flavor at all. Talk about good food.

Thanks for the polenta info. I'll be looking for it again.

OMG!!! sound delicious!!! Did you ask if the brine time was the same as beef...and what did he use besides the salt/water...for spices??? which cut of moose did he use.....rump, shoulder etc?? thanks

He used moose brisket. The cuts were less than 3 inches thick so he only went a day and a half soaking rather than three days. He used some corned beef cure and added pickling spice as per directions.
