We've discovered an easy favorite to take to holiday parties.

Thaw some salmon. We thaw the tail end that has less chance of a stray bone.

Cut into cubes. Dredge in cajun or blackening seasoning. We use McCormick's Cajun Seasoning from Freddies.

Saute in oil.

Serve with crackers or toothpicks or nothin'!

I usually mix up some salsa salmon with mayo, then serve with ritz crackers and cheddar. I'll have to try the cubed thing.

So do you mash cooked salmon with mayo & salsa or your canned salmon with mayo & salsa? Or do you bake your salmon with salsa on top then mash it with mayo? Sounds good!

My favorite is cream cheese on a ritz topped with a chunk of smoked salmon and a drizzle of blueberry ketchup. mmmmmm

I jar my salmon with salsa. Then just mix it with mayo. Also makes darn good samiches!

Good idea Rance. I mix it with horseradish to cut down on the calories for sandwiches, being I usually grill them with slab of cheese. Gonna have to add salsa. I make a smoked salmon pate with cappers on top serve with crackers. Mix the cream cheese with the smoked salmon.

Blueberry ketchup? Hmmmm.......do tell. Trader Joes has smoked salmon on sale this week..... (don't laugh, dang it. I'm in NM. We have fresh chiles, not seafood. As a matter of fact, when someone ordered sushi last week at the Japanese restaurant, I shuddered.)

Sounds yummy Gramma, the blueberry ketchup sounds interesting.
