I personally have never had ceviche in New Mexico... But I think your best bet would be Mariscos Altamar, 1517 Coors Blvd NW. They are on the west side of Coors just south of I-40. Their web site: Mariscos Altamar

I just checked Cosmo Tapas's home page to see if it was on their menu, and I was shocked to find it had closed. I never got the chance to go there. I had one of their empanadas when they had a stand at an event at the NHCC, and it was delicious.

The only time I've eaten ceviche was not in Albuquerque. I was searching for photos of ceviche and most of it looks nothing like what I had (which was either extremely thinly sliced or was some sort of paste). It was one of those pricey restaurants with small portions, but geninely exceptional food. Is there is a big difference between Spanish and Mexican ceviche? I'm guessing that what I had was more Spanish, but now that I think about it, the restaurant where I had it probably did Mediterranean and Latin American food.

I think there is a big difference between Mexican and Peruvian ceviche.

Try Taqueria Mexico on Lomas. I'm not a ceviche expert but damn their stuff is good.
