I almost forgot one of my favorites: calabacitas!

I've seen many different versions/recipes, but the main components are zucchini, squash, corn, green chile and cheese. Good times...

just used some a little while ago. I took 2 mangos, a fresh pineapple, 1 jalapeno, 3 green chiles, and blended them in the food processor. then I added 1 tbl of honey, juice of one line, 2 tbls of vinegar and a little salt. I put it all together in a large pan, brought it to boiling, turned the heat down to simmer for about 20 minutes and poured the salsa into 2 pint jars. After bathing them for 20 minutes I removed them from the stove and they are now ready to be put on chicken, pork or whatever. Of course I took out most of the seeds, still the salsa is on the hot side, just the way we like it.

Calabacitas con Queso & Chile Verde
1/4 pound butter
3 medium zucchini, medium diced
3 medium yellow squash, medium diced
3 ears corn, kernals only
1/2 pound green chile peppers, roasted,peeled, seeded and diced medium
1/3 C monterey jack cheese, grated
1/3 C cheddar cheese, grated
preheat oven to 350
In a large saute pan, place the butter and heat it on medium high until melted and hot. add the zucchini,squash, and corn. Saute for 2 minutes or barely warm. Stir in the green chiles, cook for 5 minutes
Place in large baking dish, sprinkle the cheeses on top.
Bake for 10-15 minutes, or until cheese is melted

From the Santa Fe Hot and Spicy recipe book..lots of green chile recipes in there...if I can't live there yet, at least I can cook and eat like I do! (Whole Foods has got in a nice batch of New Mexico green chiles-looks like this is what's for dinner tonite)

yep, that is another favorite, but I usually do not use the corn. I don't know why. I am making it or something similar this weekend. Instead of the corn I use stove top stuffing or croutons and I top with a 1/2 can of creme of mushroom soup and a little sour cream, it is about the same, but I got the recipe from a friend in VA. She didn't use the chili of course.
