That's good stuff. Sierra Nevada, Rogue, Firestone-Walker, North Coast Brewing and other micro-brews. I wouldn't waste the calories or brain cells drinking Bud, Coors or Miller.
I'm not a big drinker, you can say I'm the kind who feel kinda disoriented at a bar. But among the beers I have experienced. I would have to pick Heineken to be my favorite, Texas Fireman is also pretty good, but I don't live in Texas, so bad luck for me. Sam Adams and various Bud are drinkable. Can't stand Guinness though.
I'm a Sam Adams girl myself..... my fav......will drink others but NOT IPA's/PaleAles..... I think they taste WAY too much like grapefruit/citrus and that just turns me off..... I like a good cherry wheat though......
I have almost 200 bottles of beer in my basement right now from numerous labels, such as New Glarus, Dominion, Alesmith, DuBuisson, Van Steenberge, Three Floyds, Dogfish Head, Central Waters, Dieu du Ciel, Capital, Lake Louie, Weyerbacher, Tyranena, Troegs, Heavyweight (RIP), O'Hanlon's (Thomas Hardy's Ale), Bells, Highland, Dinkel Acker, Unibroue, etc etc etc...
New Glarus has come highly recommended to me by a friend who lives in Wisconsin. I've never made it up there to try it, and I can't get it at all down here. I looked for it when I was in Chicago, and couldn't find it there, either. I'm really wanting to try some of their stuff.
In terms of local breweries, Texas doesn't have many. But we do have Real Ale Brewing Company out of a small town near Austin called Llano, which makes a fantastic Brown Ale and easily the best Coffee Porter I've ever had (and I've made it a point to try a few). St. Arnold's out of Houston has a rotating beer called Divine Reserve which is sometimes quite good and sometimes horrificly bad, depending on the style. Other than that, not much to talk about in terms of Texas beers.
As far as favorite beers go, I hardly ever drink the same beer on a regular basis. There are too many new beers to try to stick with the same one over and over. However, when faced with a stagnant rotation at the pub or the store, I find myself buying Delirium Tremens, St. Bernardus 12, Real Ale Brewhouse Brown, Traquair House Ale (though I can't seem to find it around here anymore), Lindeman's Cherry Lambic, or a Belgian wit or German hefeweizen (not too particular on the brand).

It is not distributed outside of Wisconsin. They briefly ventured into the Chicago market in the late 90s/early 00s but pulled out after they found their resources stretched too thin and after a tiff with their distributor. (Beer distribution laws in Illinois are absolutely ridiculous and it discourages a lot of good breweries from doing business here.) You'll either need to make a trip to Wisconsin or have your friend up there ship you some. Yes that's illegal, but as long as you don't use the USPS you won't have any problems. If you use a private shipper like UPS or FedEx and the shipper discovers its contents, they'll simply ship it back to you or dispose of it, but they won't snitch on you. I've shipped beer dozens of times and every shipment made it to its destination. If I'm ever asked what I'm shipping, I say "marinade."
EDIT: by the way, I see you're in Dallas and lamenting the stagnant rotation at the various pubs there. There's a chain of beer bars called Flying Saucer that carries a huge and high-quality tap selection. There is a Flying Saucer in Fort Worth. If you haven't checked it out, consider doing so. And bring a designated driver who doesn't like beer, because if you like beer it's basically impossible to keep yourself in driving condition while patronizing a Saucer. There's also one in Addison if that's closer.
