I've been led to believe whiskey is distilled in Ireland and the US and whisky is distilled everywhere else.

Whisky is the official terminology of what's produced in Scotland. If it's Scotch, It's whisky. Scotch will typically NOT be spelled with the "e" unless it is a misprint/misspelling.

Default The common rule

The common rule is: If the name of the country has an "E" in it, then the spelling is whiskey.
If the name of the country does not have a "E" then it is whisky.
This is a general rule, but it is not an absolute rule.

I used to have a West Highland White Terrier named Whiskey, so I'm going with that.
