Whisky is the official terminology of what's produced in Scotland. If it's Scotch, It's whisky. Scotch will typically NOT be spelled with the "e" unless it is a misprint/misspelling.
The common rule is: If the name of the country has an "E" in it, then the spelling is whiskey.
If the name of the country does not have a "E" then it is whisky.
This is a general rule, but it is not an absolute rule.
I used to have a West Highland White Terrier named Whiskey, so I'm going with that.
Whiskey is a good name for a dog.
I would go with champagne if I had a cat.
