Because if you are serving the masses, the 'heavy' taste of the mix can better mask cheap tequila.

if you have an Aldi grocery store near you, and I don't think you do cuz you're in TX, they sell a mix called ' Fat and Juicy' that uses cane sugar and is only 30 kcal per 4 fl oz which is quite good.

Good god, if you are drinking quality tequila why on earth would you put it in a Margarita in the first place regardless of how artisan the mix might be? It's a waste and a sacrilege.

Prepared mixes have their place and a bar doesn't have to be a "dive" to use them.
