There are all on my own person 'Latin America' travel list of islands/nations that I'm hoping to either visit for the first time or re-visit. That means I'm interested in visiting all of them about the same, with a slight inclination more in favor of the Caribbean ones - Cuba, DR, PR.
Just for the sake of interesting conversation. What order would you put yours in...i.e. you might have two lists:

The only country I currently want to visit on that list is Colombia. It is by far the most interesting culturally and has amazing landscapes. There is more to Latin America than just beaches.
I have been to Costa Rica already. Aside From Colombia, Ecuador and Peru are on my list. They strike me as very interesting cultures with lots of history and are known to have very good food.

A long time ago I accepted a job offer in Venezuela (INTESA / SAIC) and was preparing my move when Chavez (spit) seized the company, ruining my plans of marrying Miss Venezuela.
I'm considering buying a finca in Colombia, DR, or Costa Rica to grow coffee, so those countries top my list.
I am interested in Spanish colonial forts, so Colombia, DR, PR, and Cuba; forts in those countries impact my list.
I am also interested in the fashion industry in Colombia (Medellin), so that interest helps put Colombia in the top position.
I like that the DR has the Larimar stone, which helps put the DR closer to the top. Also, no venomous snakes in the DR.
I bought my copy sometime last year and really enjoyed it. Its focus is mainly on the first castles in the Americas (with a prominent mention of La Torre del Homenaje in Santo Domingo, which is the only Medieval castle outside of Europe) and the various Spanish fortresses that are still standing in Dominican Republic, Puerto Rico, Cuba, even the one in St Agustine, Florida. I really like the three-dimensional diagrams of the various fortresses, especially the one they did exceptionally well on the massive El Morro in San Juan, Puerto Rico.
Its a very beautiful book. Highly recommend it.
The best way of making the most of a visit to anywhere, but especially places steeped in history, is by reading up and learning as much as you can about these places. That way when you visit you can actually enjoy, appreciate, and have a better understandings of the things you will see. It also opens the door to going off the beaten path and discover a plethora of historic sites that most visitors don´t even know exist.

Good food in Colombia...? Hmmm....Don´t hold your breath! I guess if you´re here for a week or two and have researched the BEST places, you´d be alright. Stay here longer and go to places winging it and you´ll end up disappointed.
I really like birds and the Americas have the richest avian species diversity in the world. Colombia, Ecuador and Peru top the list. Even tiny Costa Rica and Panama have more species of birds than the giant USA. Maybe one day I'll be able to visit some of the mountain rain forests in these countries.
Chile is also interesting. Of all of Latin America, they have done the most to create a prosperous, growing and stable economy. They are doing pretty well. Plus, there is such a wide range of climate zones... many of them like coastal California... but at a much reduced cost.
