Cotton is exported so some girl in Malaysia makes clothes for you.
Alfalfa get eaten by dairy cows.
They grow a lot of dairy feed.

So why do we need to grow each of those water intensive crops here. They can be grown almost anywhere

Because they harvest Alfalfa 12 times a year. What is not possible in most the country/ And for cotton, they grow also corn before they plant cotton. Cows give a lot milk in AZ. They drink more and are milked 3 times a day.

While we're on the subject of water-intensive Arizona crops, I wonder which industry uses more water, lettuce or pecans.

I don't know the answer to that, but another question to ask is, what is the relative "value" of the crop? I suspect pecans have a high net-value as an agricultural crop. Lettuce? Not sure.

They grow in the winter about 90% of all lettuce for the USA and Canada... It is big business
