holy cow at how many people want to move to Show Low. Maybe my dream will come true after all. Though with the unfortunate urban sprawl that might not happen.
As far as church and christian way, the whole area is infested with mormon's, i hope you're ready for that. There are some churches in Pinetop that would be deemed crazy, seeing as the founder of the church is considered the "savior," along with Catholic churches. My parents haven't been able to find a sensable church in the area, but if you do please let me know so i can let me parents know.
As far as grabbing your untammed dogs, i would leash them and watch what they do. My parent's cat goes into the forest and comes back every morning. I would only be scared of your dog getting lost or getting hit by a car.

I don't hike with my little dog, even on a leash but I do walk her in a neighborhood with caution, I have heard that coyotes have grabbed dogs on leash and taken off, but it's not the norm. You are most likely to encounter them very early in the morning or around dusk, about the times their food (rabbits, quail, small rodents etc.) is out and about.
Chain link is good but make sure they can't get under and stay with your dogs out there at night. What breed are they?

Unfortunately...they are little yappers, peke/pom mixes, three of them. In the city, they are like a little gang when we have them outside. They will surround a jogger or another dog and yap them to death. Probably wouldn't work so well with a coyote or one of your local "pigs".
We also heard that owls or hawks will swoop down in back yards for little "bait dogs". Thus, the roof on the dog areas, have you heard this?

yes, you have to assume they're never safe if outdoors alone (unless you have the roof on their run) if you want to keep them...I guard my Maltese with my life! If she's outside, it's on a leash with me.

Can you drop one with a decent caliber handgun? My wife and I are looking at land to build (in cash) and then move up within 4 years, and I would not want to spend time in the woods with my pups and not have a way to put a stop to something intent on harming a 4 legged family member.

They are real, but if the pups are like family and you make smart choices, I would think you have cut your % of an issue to a very low amount. Situational awareness is key.

They are totaly like family! We raised three kids and have now replaced them with three little dogs until any grandkids happen. :0) We would be devastated if something happened to them that could have been avoided which is why we keep asking questions about this.
so, if we fence off an area of our yard (we back up to pine trees so this is forest for at least a ways) can we feel safe if we are outside in that yard WITH them? Nobody has mentioned flying predators....does that ever happen?

Actually, it does. We live at the base of the Superstition Mountain east of Phoenix, and my sister-in-law's (fat) cat was taken from their dog area. They have since put a chain-link roof on it.
Don't let the previous posts get you in a panic. Exercise caution, and be aware that this is the wildnerness. Respect nature, and all will be well.

gee, we must have you in a fit over this wild animal business.....can you bring your dogs in for the night?....it will be below freezing in the winter at night.....make sure the yappers don't bother other neighbors....no problem taking your dogs for a walk at night...just keep them leashed and look around for sasquatch.....
Show Low is a decent place....lots of families as it is predominately, not "infested" with, LDS (Mormon) members....lots of old established families, but there is so much growth you shouldn't feel too much like an outsider....be a good neighbor.....get involved in the community and I hope the new business does well in these tough times.....do what you can to market it and network with others
