AFAIK, in most states, squirrel is considered a "game" animal, ie defined seasons, limits, allowed weapons. Also, they generally cannot be sold commercially (don't know if there are game farms that raise squirrels, or "farm-raised" as is allowed for rabbits and quail).


When I was younger, there was one restaurant in my home town, which advertised on their menus "you kill it, we'll cook it". Only place I ever knew of, squirrel, rabbits, game birds, and fish.


Two basic methods for cooking squirrel : for young tender squirrels, pan-fry, for older (tougher) ones, boil or stew. My sister makes fabulous squirrel dumplings, her husband's grandfather's recipe.


One other recommendation, try to avoid squirrels that live on evergreen trees. Those that live in hardwood forests are the best eating - oak, hickory, etc.

It was a staple at my grandparents' house, along with rabbit, quail, duck, fish from the river, and venison. They grew and canned their own vegetables so only bought commodities (flour, milk, butter, salt, spices) at the grocer. Mostly squirrel was a breakfast dish - my grandmother breaded and fried it, made gravy and served it with biscuits. I liked it better than rabbit, venison, and duck. To this day I don't like those.

I haven't had squirrel since I was in my late teens but I'd not turn up my nose if I was visiting someone who is a good cook and serves it. I don't recall it tasting especially game-y.
