okra gumbo:
sautee an onion in a smidge of butter
add a couple cups of chopped okra
in 10 minutes or so transfer okra and onions into large pot
add 1 quart tomatoes (home canned or fresh are best)
cut kernels off an ear of corn into pot
salt and pepper to taste
simmer an hour or so. Very good!!! I have added rice when i needed to stretch it further. If you do not sautee the okra it will be all slimey and gross so don't bypass that.

smiling nurse, if you really want to make a true gumbo, you gotta have a roux! without roux, you just have soup. My Grama used to make the best gumbo. I still haven't quite gotten the hang of it. I'm from Louisiana, btw, not Cajun, but i know about gumbo.

That said...okra and tomatoes are good no matter how you fix 'em!

Just remembered, I have a friend who married into a family with some Cajuns in it, and she said in south LA (which is another country!) they thicken their gumbo with okra, but it is a special kind that they grow down there, she didn't know what kind it is.
