A slice of the crispy pork skin on top with the pork fat in the middle and pork meat below it dipped in Lechon sauce ( Sarsa para sa Litson ) is to die for!!
yeah without the lechon fiesta will not be complete hahaha... I like the lechon pork skinned hmmm yummy
January 9, 2012 will be "Black Nazarene" or Nuestro Padre Jesus Nazareno Fiesta
known to devotees as (Spanish: Nuestro Padré Jesús Nazareno) ("Our Father Jesus Nazarene") in English, is a life-sized, dark-coloured, wooden sculpture of Jesus Christ, believed to be miraculous by many Filipino devotees. Originally a statue with fair or light complexion, it turned dark after it was exposed to fire on its arrival from Mexico. The statue is currently enshrined in the Minor Basilica of the Black Nazarene in Quiapo, Manila, Philippines, where the Feast of the Black Nazarene is celebrated every January 9 along with the weekly Friday Novena Masses.
SINUKWAN FESTIVAL, San Fernando Pampanga - relives the Kapampangan spirit with a week-long calendar of cultural revivals capped by a grand street-dance parade in the streets of San Fernando, with towns outdoing each other to the tune of “Atin Cu Pung Singsing.” Organized annually by the Save Pampanga Movement, the festival memorializes Aring Sinukwan, god of the ancient Kapampangans.

You're making me hungry again! Pancit Palabok with calamansi is another dish that comes in mind.
I grew up in Pampanga for 13 years and didn't even know the SINUKWAN FESTIVAL even existed (fyi, then I was a very naive kid ... didn't even know Mt. Pinatubo existed in my backyard. LOL). There's just too many fiestas to remember.
The Piñata is also quite common during birthday parties for kids.

i think this is the one that you were telling me about holy week in Pampanga, yeah, pampanguenos are known with sinakulo and pasyon. lol with the Mt. Pinatubo, ashes even reach our place in Pangasinan when the Mt. Pinatubo erupted.

The “Pastores-A-Belen,” is a Christmas carol composed by national hero, Dr. Jose P. Rizal, more than a century ago.

Yeah, that's it. Good thing you didn't post photos of people being nailed to the cross (not to mention wearing the sharp crown of thorns in the head)...that would make people sick or worse, faint.
Speaking of Christmas, might want to add the Parol . I use to build a lot of these when I was a kid. People would even compete for the best Parol (another indirect Roman Catholic influence).
This is one of the event I miss in the Philippines. Watching the "World Pyro Olympics", A yearly event in the Philippines.
They also celebrating the Subic, Clark International Hot Air Balloon
