12 is pretty hard

Mapo tofu
Shumai with half chili half horseradish sauce for dipping
Canto style roast duck in a noodle soup or just by itself
Congee with sliced fish and shredded lettuce (canto style) with finely ground white pepper and just a dash of red vinegar
Taiwan-style porkchop rice with suan cai/chinese sauerkraut and a bit of saucy ground pork on the rice
Pho with all the fixings
Vietnamese beef stew served with a vietnamese baguette
Raw beef larb served very spicy
Uni sushi
Gyudon with all usual accompaniments
Ankimo
Tom yam kung maphrao on nam khon--shrimp tom yum soup with a touch of coconut milk

Leaving a lot of stuff I like out, but that's already twelve.

1. Laksa -Singapore/Malaysia
2. Tonkotsu ramen - Japan
3. Siu Ngap (Roast duck) - Hong Kong
4. Bulgogi/Kalbi -Korea
5. Hong Shao Rou (Red Braised Pork) -China
6. Bun thit nuong (Grilled meat on rice noodles) - Vietnam
7. Shen Jian Bao or Xiao Long Bao (Steamed pork buns) - Shanghai/Taiwan
8. Sashimi, especially toro (fatty tuna belly) - Japan
9. Banh mi (Vietnamese baguette sandwich) - Vietnam
10. Bibimbap (mixed rice bowl) - Korea
11. Dan Dan noodles - Szechuan/Taiwan
12. Soon doo boo (Spicy tofu soup) - Korea

East Asia biased since I'm not too familiar with SE Asia or South Asian cuisines

How can you leave out the really only world-class Filipino dish - Sinigang? Especially na Bangus. Those other Filipino dishes are fine, but most of them are a bit provincial. And if I've got blood its better used in a boudin noir than diniguan. Sinigang stands out, it really is excellent.
BTW, amongst foodies it is not clear that chicken tikka massala is an indian dish, it may have been invented in Scotalnd by an East Asian. However, it is certainly what one would consider Indian Cuisine.
