Is it considered a delicacy? Or do most people enjoy eating it?

Pretty rare; I don't know of anyone who's eaten bat here and most people would recoil at the thought of doing so.

Other animals such as pangolin, peacock, dog, etc which are more popular, are still not commonly eaten and you can't just pop into your neighborhood noodle shop and get some. You usually have to go to a specific shop to get them.

Most wet markets sell pork, chicken, beef, fish, and also frog and turtle, sometimes snake, alligator, and maybe scorpions (here in Guangdong). But most arent going to be selling rare animals in the open.

Chinese do have the taste for the exotic, I've seen some strange things at these markets...and ate some strange things - bullfrogs (didn't know it at the time), also something described as snails with crunchy fetus eggs or something inside. I asked my Singapore girl "OK snails is a new one, what's the crunchy stuff" and she looks and goes "oh those are snail fetuses".

By the way the one theory now is that the current virus was from a pangolin that ate an infected bat. Then someone cut up and/or otherwise ate the pangolin.

I don't think pangolins can eat bats. They mostly eat insects.

Extremely uncommon per capita—however, there are over a billion people in China.

Unfortunatley, yes they do, & they are becoming endangered. Google it. I think they are also used for some herbal (nonsense) remedy in Asia.
