Talk about feel-good nationalism.
Yuan was recognized as a "dynasty" by Ming and Qing governments as well, and thus was written in history book. Yuan is a Chinese word and Mongols adopted it.

Everyone knows they are not Han Chinese, but I don't consider it a problem to recognize them as a dynasty. They are neither the first nor the last government established by minority groups in China.

However, there is no point to glorify them (as some books do). There were not really a lot of positive "achievements".

But my text books here in the United States also said the Yuan Dynasty is a Chinese dynasty. So I'm pretty sure it is a universally accepted part of history that the Mongolian rule is one of several Chinese dynasties.

Lets put it this way, Tibet will be an independent nation once more when the Israelis and Palestinians make an actual long lasting peace based on trust and respect for each other. China has enough clout on the world stage that makes stirring the pot by advocating Tibetan Independence not worth the trouble.

Anyways, is there much ethnic tension between Uyghurs and Tibetans with Han Chinese, or are most of the attacks against government infrastructure and institutions?

There have been some clashes. The government has been largely responsible for settling more people in Xinjiang and Tibet, so resentment for government can also spill out to resentment against people.

So were the Manchu (Qing) and the Jin (Jurchen (early Manchu)).

Indeed. The conquerors instead of imposing their culture on the people (although they did import some customs), largely adopted Chinese culture and became Sinified. As a result Manchu is moribund and on the verge of extinction as a spoken language in China.

or for that matter, why the UK doesn't give up Falkland, British Virgin Island, and all the overseas territories, or France gives up its DOMs and TOMS?

Tibet is part of China now. Deal with it.

Exactly.
Most western countries has realized by now that it is not worth meddling with it. The cost will be extremely high.

China will probably give up Tibet after the US gives up Hawaii and Alaska. Neither is gonna happen.
