If you reach Atlanta by 6:00 AM, it will be a breeze. If you come at 7:00 to 9:00, it will be a pain. Adjust your arrival time accordingly. I moved here from Michigan back in June but when we go to FL, we always take I-75.

Are you by yourself or will you have a passenger? If there's more than one of you, take the car pool lane.

For the sake of the drive... The westside of 285 is most definitely the way to go! Fewer congestion problems. Stay away from the northside of 285 at all costs! DO NOT drive to the east side of 285. The northern part of 285 has its own downtown office buildings and is extremely congested.

If you stay on 75 south The traffic back up will be between the connector... (where 85 and 75 merge) and I-20. Traffic gets really bad here. It is the busiest stretch of freeway in the region and is only topped by a few places in California, however it is a relatively short stretch and has an absolutely amazing view of our city. So for what is an extra 10-15 minutes at most you can get a quick sightseeing if you care to do so.

Outside that... your absolute best option is to stay on 75 and avoid rush hour... before 6:30a or after 10am.
Also stay in the carpool lane as much2fla suggested and you'll save 5-10 minutes.

It should be mostly a straight shot down I-75 to Ocala. I'd just recommend taking I-475 to by-pass Macon. I basically take this drive from Atlanta all the time when I go to see my sister in Valdosta.

I'd vote on staying on I-75 also, unless traffic is bad when you get just North of the city. Then maybe make a decision to go around on I-285 West. I-285 East you never can tell if it will be bad or not until you get on it. Agree that once you get South of I-20 it's a breeze, even during rush hour. I make this drive down I-85 everyday from Chamblee to downtown Atlanta. Since you're coming down I-75 you wouldn't have to deal with the GA-400 merge with I-85, which is the worst part of the whole commute to me.
