Gwinnett still has plenty of parks that are relatively quiet. I discovered Peachtree Ridge Park just yesterday!

I've also noticed that nearby Forsyth County is upping the game on its parks. Chattahoochee Pointe is a beautiful walking park that I've never seen more than 2 other cars at.

When the nearby houses are finished, it will be another story, but one of the great things about the metro area is that is has both urban and suburban parks.
