Proper names for neighborhoods do matter.

When saying "The Highlands" it means referring to both neighborhoods together:

Poncey-Highland and Virginia-Highland

This can make sense when used appropriately considering that their commercial/entertainment corridors flow together along North Highland/Highland Avenue.

I think some S-adders may be subconsciously conflating it with Highlands, NC.

And some people may just think it sounds cool.

However, we have lived in Virginia-Highland and still own property there, and I have never heard the folks who live there refer to it as anything other than Virginia-Highland. Some of them are pretty persnickety about it.

And yes, both neighborhoods get their name by reason of the intersection with Highland Avenue, not the topography.

Nah, some people just add S to some words for no reason. Kroger is a good example. I've heard lots of people say they shop at Krogers, or even The Krogers.

Ha! My mother used to do that exact thing.

Occasionally I'd try to correct her and say, "Mama, you mean Kroger, don't you?"

And she'd reply, "That's what I just said!"

There's actually a reason for that. Grady was segregated until the early 1960s, so there was a black Grady and a white Grady.

At least that is what I have always been told.

She probably meant Kroger's...with an apostrophe. Like it belonged to Mr. Kroger. I've heard that one before too, maybe because grocers used to sometimes be named after the owner.
