Former east coaster here... for bagels, it's all about freshness. You want to eat it the day (if not the same hour) it is made. This is when a bagel is at its best—moist, chewy, fluffy. Austin isn't big on bagels, like on the east coast, so I think it's hard to find fresh, just-made bagels, hence the cardboard/brick comments. That's why I like places like Rockstar bagels where you can ask for whatever they just made.

If you're going to economize by buying in bulk and/or day-old bagels, you really need to toast them. That can help a bit. But a toasted fresh pumpernickel bagel w/butter really is ideal.

I did pick up four plain bagels 2 days ago, still have one left. I'm not sure they were fresh when I bought them, they seemed pretty hard. But I used a trick I read about to freshen them. Wrap a bagle in a damp paper towel and microwave for 30 seconds. After doing that they were quite good, soft and fluffy inside while still having a nice chewable texture. I liked them better than Einstein Bros Bagels and recommend you give them a try.
