Cool, I know one of the facility managers at Aspire. I’m glad they’re taking off.

I haven’t tried cricket protein yet, but I can’t imagine I’d even be able to tell the difference. It’ll become a bigger part of our diets as flood/drought cycles intensify and make traditional sources of protein, both plant and animal based, more expensive. I can even see where cricket protein could possibly enhance meat imitations since they have an umami flavor profile. In baked goods, it adds a nutty, sunflowery flavor, and it’s loaded with nutrients.

That’s all to say that I’ll definitely pick some protein bars up next time I’m in town.
