I believe someone upthread named the Mexican states from which "interior Mexican" is generally thought to originate.
That should clear up your confusion.

Because that's not how they do it? I don't know, perhaps you can track down whoever made this distinction long, long ago and convince them to change it to fit your idea of how it "should" be done.

There IS a Mariachis de Jalisco in Round Rock, and one in Taylor, but the one we went to was the one in Georgetown. (I haven't made it to the one in Round Rock yet to see if it's just as good.)
Filipino - hmmm. Nope, but I'll check with my foodie contacts and see what I can find for you! The Food-Centrics are having a Scottish Potluck tonight; I'll start by asking the attendees there.

Ah yes that is correct. I couldn't find the one in Georgetown on Yelp. But judging from the location, I know where this round rock one is.... In fact, Im going to go there right now  I will let you know if it is any good.

Okay I went to the one in Round Rock and it was pretty good. I do not remember the 'hot bean salsa' the same. Maybe they were a tad different than the Georgetown one.
