Pozole always has hominy, that's one of the key ingredients. Here's a recipe that gives the basics of what usually go into it.

Enchiladas y Mas (on Anderson Ln) has the best enchiladas in North Austin. All their food is great and cheap. They have great margaritas too. Maudie's would probably be my second choice. Maudie's has several locations around town.

Basically, both use versions of the original "Austin style" enchilada recipe developed by Jorge Arrendondo. E y M is the closest version. He used to own Jorge's on Hancock which was my favorite until it was sold and turned into the West Texas style Jorge's. He also owned AusTexMex which was fantastic and went under. He's had a hand in owning or advising in the kitchen at all these places. I think Casa Garcia in South Austin is also a nephew or cousin of his.

The Jorge's on Hancock was the best Mexican food in town until the divorce.

I like Amaya's Taco Village. It's in the Capital Plaza. 5405 N. IH 35. Very resonable but the wait can be long. I know you want enchiladas, which I think are good there, but the chicken village tacos are to die for.

I prefer down & dirty "joints" like Jardin Corona (either location) or Tapatillo Taqueria for cheap, good Tex/Mex (& also authentic Mex) food with a kick. Authentic white cheese on all their dishes (unless cheddar is otherwise mentioned) & hot sauces that rock. Bonus point that half the diners are Mexican & Mexican/American families.

But then again....I like taco trucks too.
